COLORFUL SARDINE SALAD
A nice fresh and flavored salad. Ready in just a few minutes, it can be served on its own for lunch with bread or as a starter before a main course.

INGREDIENTS
1 avocado
1 fennel
2 bell peppers (different colors)
1 can of sardines in brine
Bouquet of arugula
4 quail eggs
salt, black pepper
lemon
olive oil
PREPARATION
- Boil the eggs for 2 minutes. Cut them in half.
- Fry the fennel in a pan. Cut the peppers and the avocado into slices.
- Mix all the ingredients and season with salt and pepper. Drizzle with olive oil and lemon.
