Para ello, est\u00e1 dotada de varios segmentos de producci\u00f3n, con las normas internacionales correspondientes a cada uno de sus pa\u00edses socios. Los responsables se aseguran de que no permanezcan demasiado tiempo en el agua, pues corren el riesgo de volverse blandos y esponjosos.<br\/><br\/>\nDespu\u00e9s viene el despiece y la limpieza del pescado.\n<\/p>\n\n\n<p>Esto incluye descamaci\u00f3n, evisceraci\u00f3n, eliminaci\u00f3n de las partes que no se vayan a enlatar y un lavado a fondo con agua. Algunos peces peque\u00f1os no necesitan ser eviscerados, pero a la mayor\u00eda hay que hacerles un corte cerca del centro del vientre y quitarles las v\u00edsceras. El despiece posterior consiste en quitar la cabeza, las aletas, la cola, las aletas del vientre, la piel o la espina dorsal, o incluso el fileteado.
